8 days / 7 nights - Once a year in July Soriano nel Cimino transforms into a bustling destination for music lovers from all over the world as it hosts the annual Tuscia in Jazz festival. Hundreds of Jazz musicians and thousands of spectators from dozens of countries descend on Soriano for this fantastic event.
This festival has attracted such artists as Benny Golson, Bobby Durham, Buster Williams, Shawnn Monteiro , George Cables, , Eddy Palermo, Jimmy Cobb, Kenny Barron, Joey De Francesco, Ray Mantilla, Eddy Palermo, and many more.
To honor this wonderful festival, DiscoverSoriano (a festival sponsor) has created a special itinerary that has been crafted around the festival events.
During the festival, each night there are performances in the piazza from around 9:30PM until Midnight. After the performances, a tavern opens up just a few steps away where jam sessions are held all night long.
To accommodate this, we have structured this itinerary to start later each day to allow our guests to sleep in, and always end back in Soriano early enough to enjoy the festival performances. As such, each day we will start with lunch, and then have one excursion or a cooking class, and end our days late into the night with festival performances and jam sessions.
In addition, our guests will receive special VIP treatment each evening at the festival. Each evening we will have a table set aside for our guests with a complimentary bottle of wine for each two guests. We will also spend some time visiting the Jazz master classes for a behind the scenes look at the festival. You will not simply be a spectator… you will be a part of the festival with us.

For those arriving in Italy today, we offer a shuttle to Soriano nel Cimino at 10:30 AM from Rome Fiumicino Airport and 12:00 from the Rome Civitavecchia cruise terminal. For those already in Italy, we offer a shuttle at the ORTE train station (a 35 minute train ride from Rome Termini station) at 3:00 PM. For those arriving at times that do not coincide with our shuttle schedule, we can arrange for a private driver to bring you to Soriano for an extra charge.
Once in Soriano we will help you to your home for the week and give you some time to get settled in, unpack and rest up. You will find some snacks and drinks waiting for you when you get to your home.
At around 5PM, we will meet with those that are up to it for a little shopping for tomorrow’s class. We will stop in a local fruit vegetable shop, a grocer, and local butcher as we meet some of the shopkeepers we will get to know during our week and pick up what we will need for tomorrow.
Next we will do casual walking tour of Soriano’s medieval quarter. We’ll visit the castle and have a walk around the narrow streets of this beautiful area. During our walk we’ll stop in the studio of the extremely talented local artist, Riccardo Sanna and have a look at what he is working on. Later we will have a casual gelato in the town piazza as we get to know one another.
For dinner tonight we will dine in an ancient monastery in Soriano that has been converted to a wonderful restaurant. Here we will sample many local specialties in the first of many multi-course meals as we dive head first in Italian culinary culture. The menu for tonight’s dinner is:
Appetizer:
A sampling of Local Salame, Prosciutto, Porcini Bruschetta, Olive Bruschetta, Ascoline Olives (fried sausage-stuffed olives), and Sutrini (a local crepe with romano cheese)
First Course
For our first course tonight, we will have samplings of two local pasta dishes: Gnocchi col Ferro (a local specialty eggless pasta that is hand rolled in an Arrabiata sauce) and Ciuffetti Sorianesi (hand made pasta purses, stuffed with radicchio and speck in a parmesan cream sauce).
Second Course
After our pasta dishes we will sample local grilled sausages and tagliata al aceto balsamico (A grilled steak, marinated in balsamic vinegar atop a bed of rucola salad)
Dessert
Finally we will be brought a lemon sorbet dessert and end our evening with a glass of Limoncello
As always, wine is provided with all dinners, and we favor small local wineries wherever we dine. Tonight's wine will be a local red from Castiglione in Tevernia, Umbria.
After dinner, we will go to Soriano's piazza fot tonight's performances in piazza and late into the morning hours for jam sessions.

Today you have the morning to sleep in or take it easy in Soriano. We'll meet at 1:00 PM for lunch in Soriano.
After lunch, we will rest a bit over an espresso before we go on our excursion to the nearby town of Bagnaia where we will visit the magnificent Villa Lante. This estate was designed in the 16th century for Cardinal Riario, and later inhabited by Cardinal Gambara. The estate, which has been credited as one of the inspirations for Versailles in France, boasts stunning water gardens. After a few intense days, you will truly appreciate the peaceful atmosphere the villa provides.
Next we head out toward the nearby city of Viterbo for the late afternoon and evening. Viterbo is the first major city heading north from Rome. It boasts great historic significance, as it served as the seat of the Pope for years during the 13th century.
We will visit the Papal Palace, the ‘unofficial’ Vatican during a time when life in Rome was considered too dangerous for the Popes and Cardinals. In fact, this is where the first papal conclave occurred, and where the tradition of white and black smoke began in the choosing of a new pope.
In addition to the Papal Palace, Viterbo holds the distinction of having what is considered to be the best preserved medieval quarter in the whole of Europe.
We’ll stroll the streets of the medieval quarter, then take some time for shopping on Viterbo’s Corso shopping district before having dinner in this magnificent city.
We’ll have dinner in a local restaurant that creates extremely unique dishes based on recipes from Etruscan history.

Today you have the morning to sleep in or take it easy in Soriano. We'll meet at 12:30 PM and stop for sandwiches on our way to Pienza..
After lunch, we’ll take the short drive to beautiful Pienza, known for its incredible Pecorino cheese. You will have a some time to walk around this charming village, do some Pecorino cheese tastings and some shopping before we leave for the town of Montepulciano, where we will do a wine tasting & tasting and cellar tour.
Montepulciano is known for its Vino Nobile wine, a competitor for the Brunellos. Here we will tour the town’s ancient 14th century cellar that was built underneath the Palace of Cardinal Ricci and is widely considered to be the most beautiful wine cellar in the world. After the cellar tour, we will participate in a complete tasting of Montepulciano’s fantastic wines.
After the tour and tasting, we will proceed back to Soriano for dinner After dinner, followed by tonight's performances in piazza and late into the morning hours for jam sessions. * For those that don't want to make it a late night, the piazza and sessions are very close to your lodging. |

Today you have the morning to sleep in or take it easy in Soriano. We'll meet at 12:00 PM for a quick lunch in Soriano.
After lunch, we'll leave for the nearby dying city of Civita di Bagnoregio, a nearly deserted town that was originally built by the Etruscans in the 6th century BC. It is called the dying city because it is literally crumbling away thanks to thousands of years of erosion, to the point that it is now accessible only by a foot bridge. Civita resembles a ghost town, but is extremely well kept as a place where time is frozen. While there, we will visit Civita's ancient olive mill that was built by the ancient Etruscans.
We'll then return to VIlla Eddarella for another class. Today we will learn how to make Italy's famous after dinner lemon liqueur, delicious and authentic Biscotti, Granita, and Gelato.
Besides the traditional Limoncello, we’ll also make our own family recipe for Crema di Limoncello (Limoncello Cream Liquor).
Our Biscotti today will be a local specialty known as ‘Tozzeti’, which are delicious Hazelnut biscotti, traditionally dipped in wine when eaten.
While our Biscotti are baking, we’ll make a wonderfully unique Dark Chocolate Pepperoncino Gelato, Hazelnut Gelato (Made with local hazelnuts), and Lemon Granita.
Throughout the class, rather than have a full lunch, we will pick on local salame, cheese, and the results of our class.
When today’s class is over, you will take home a ½ liter bottle of each Limoncello we make, plus a bag of our Biscotti to take home when the week is over (as if they will last that long).
After class, we will give you some free time to take a break during the afternoon in Soriano before our dinner at Soriano’s ‘Due Camini’ Trattoria.

We will take a drive to a small family-run winery and olive mill in the village of Castiglione in Teverina. Here, one of the owners will give us a private tour of their wine cellar and olive mill, followed by a tasting of their line of wines and their olive oil, as well as a light lunch based on local specialties.
Next, we will go on to the nearby Umbrian city of Orvieto which is the home to one of Italy’s most magnificent cathedrals, as well as the world-renowned white Orvieto Classico wine and beautiful ceramics shops.. Here we will give you the afternoon and early evening free to explore this wonderful cliff-top town.

Today you have the morning to sleep in or take it easy in Soriano. We'll meet at 1:00 PM for lunch in Soriano.
After lunch, we will head into the Umbrian countryside past the towns of Narni (The inspiration for C.S. Lewis’ Chronicles of Narnia) and Terni (The home of St. Valentine) to the village of Marmore, at the edge of Lake Piediluco and the top of the breathtaking Marmore Falls. The Marmore Falls are not only the tallest waterfalls in Europe, but are also the oldest man-made waterfalls in the world, having been created by the Ancient Romans in an effort to fight disease in the nearby city of Rieti. Here, we will begin at the top of the waterfalls and walk alongside (and behind) the falls to the base.
After visiting the falls, we will head back to Soriano for the annual 'Notte Bianca'. This is an all-night party in Soriano, during which all stores, bars and restaurants remain open all night, stages are set up all over town for concurrent concerts all night long, temporary taverns are set up serving local specialties, stands are set up everywhere, and entertainment is non-stop. All of the biggest names at the festival will perform tonight on the main stage, and there will be a festive atmosphere with thousands of people here... you are sure to never forget it!

We are going to let you (and ourselves) really sleep in and take it easy today. We will meet up at 2:30 PM in Soriano and drive down to the villa for our last class and farewell dinner.
In today's class we will learn the secrets of making homemade Fettuccini from scratch, and prepare two wonderful sauces for it. The first is our special family recipe for Ragu, passed down through the generations. Following the ragu, we will learn to make a delicious sausage, onion and vodka cream sauce. In addition to Fettuccini, you will also learn to make a delicious appetizer made of pancetta-wrapped pineapple. To cap the meal off, for dessert we will learn to make our own very unique and special recipe of Tiramisu that is certain to be the best you have ever tasted.
After dinner, we will come back to Soriano after dinner. Traditionally there is one final evening of jazz festival entertainment in piazza, and this is usually it.

Unfortunately our week comes to a close this morning. For those that are leaving, we will have breakfast in Piazza before an early morning trip to the airport and/or cruise terminal, exchange hugs and say ‘see you soon’ to our new friends. For those departing to other parts of Italy, we will bring you to the train station as needed. If you have later flights out, we will be happy to arrange for a private car (additional fee) to take you to Rome, the airport, ceuise terminal, or trains. For those choosing to continue with week #2, you will have the entire day to relax in Soriano, or to venture out on your own. We will be more than happy to help you with the logistics of this ‘on your own’ day while we take care of seeing people off and welcoming new guests. |

Menu Variations
The menus listed on the itineraries are subject to change depending on season. This is a summer itinerary. We use only fresh ingredients wherever possible, so if we are unable to prepare a certain dish, it will be substituted. In case of expected rain, Pizza night will be replaced with Lasagna class. Between November and April, Pizza night will be replaced with an evening of Italian Grill at the fireplace.
Flexibility
Our tours are designed to be quite flexible. In fact, itineraries rarely go exactly as designed. As we get to know each other, there may be special requests, or a group 'vibe' develops. As long as the whole group agrees, we can almost always make substitutions, and often do.
Weather
Many places on our itineraries don't work well with rain. When we do get rain, we try to rearrange the schedule to make the best of it, but substitutions may be made.
