All-Inclusive Cooking Vacation including Rome, Assisi, Tuscany & roads less traveled

About to have lunchThis 8 day / 7 night package takes you into beautiful Tuscany & Umbria, the wonders of Rome and the Vatican, and roads less traveled. In between these wonderful excursions, you will take part in 3 fantastic cooking classes, in which we will make homemade Gnocchi, fresh mozzarella cheese, and true Italian Country Wood-Fired Pizza.

Our excursions this week are designed for those that want a balance of sightseeing in Rome, the Eternal City, and some of Central Italy's most beautiful nature and history. We'll spend two days in Rome, where we will visit the Vatican, The Colosseum, The Spanish Steps, The Trevi Fountain, The Patheon, and much more. We'll even spend an evening stolling the beautifully lit streets of Ancient Rome. Aside from Rome, we will visit beautiful and historic hilltowns of Umbria and Tuscany (Including Cortona & Assisi) where we will sample local wines, visit an olive mill, cheese factory and much more.

When the week is over, you will have experienced the real Italy that few tourists have ever experienced, but you will have also experienced the wonders of Rome. You will have made new friends, and you will have learned why Italian culture is so amazing... because you will have lived it.

Day 1 (Saturday) - Welcome to Soriano!

If you are arriving in Italy today, you will be greeted at the Rome airport and taken to Soriano nel Cimino, where you will get settled in.  If you are already in Italy, we can either meet at the Rome airport, the Orte train station (36 min from Rome’s Central Station), or in Soriano if you have a car.  If you are arriving by ship, we will pick you up at the Civitavecchia Cruise terminal.  We will have a light lunch, and give you a few hours to get settled in.  For those that are up to it, we will explore Soriano and have some Gelato while as we soak in at this beautiful medieval village and get to know one another.  Tonight we will dine in an ancient monastery that has been converted into a wonderful restaurant.

Day 2 (Sunday) - Villa Lante / Faggeta / Pizza Class

This morning we will start our week by visiting the stunning Villa Lante, a 16th century villa that was granted by Pope Pius V Cardinal Giovan Francesco Gambara in 1566. It boasts one of Italy's most famous and beautiful gardens that ribals that of Tivoli in beauty. After visiting the villa, we will stop in a local Gelateria that is famous for making some of the best Gelato in the region.

We will then drive up to the summit of Mount Cimino to visit the majestic and enchanting Faggeta Forest that draws thousands of visitors each year. Here we will have a traditional Italian picnic under the towering canopy. We'll enjoy several varieties of fresh cheese & grapes, a selection of different kinds of prosciutto, salame, mortadella and more... all with freshly baked bread, focaccia, wine, mineral water and soda.

After we have relaxed and had our obligatory after-lunch espresso, we will take it easy until later afternoon for our next class... a night of Pizza!

In Italy, making Pizza is a social event, similar to the way many of us think of having a Barbeque.  It is a time of fun and laughter where bonds are forged.  It is a truly special experience while the group shares the homemade pizza one tray at a time as it is pulled from the wood-fired brick oven and carried piping hot to the garden table under the vines and stars.

We will prepare several kinds of dough, and prepare the fresh tomatoes, mozzarella, and many other ingredients for this wonderful evening together.  Each person will help while they learn every stage of this event.  You will make the dough, prepare the ingredients, help fire up the oven, and even handle the peel as the pizza cooks.

It will be true Italian country pizza, like nothing you have ever experienced.  We’ll learn to make Focaccia, Pizza Margherita, Sweet Onion pizza, Potato pizza,  and for dessert we will have Sugar Pizza and finally Nutella Pizza.

Day 3 (Monday) - Rome

Today we will head into the eternal city for a day of sightseeing. We'll start with a complete tour of The Vatican where we will visit the Sistine Chapel, St. Peter's Basilica, The Catacombs, and The Vatican Museums. After our time at the Vatican, we will have lunch in a local cafe and rest a bit before we proceed to Ancient Rome, where we will tour the Colosseum, The Forum and Circus Maximus. Finally, we will proceed back to Soriano where we will have dinner at Trattoria Tre Scalini.

After dinner, those that are up to it can join us for an after-dinner Gelato in Soriano before we retire for the day.

Day 4 (Tuesday) Cortona & The Tuscan Sun

Today we will go in the opposite direction, taking us into the beautiful hills of Tuscany. We'll spend our morning in Cortona, which was the setting for such films as 'Under the Tuscan Sun' and 'Life is Beautiful'. We will visit the local shops, stroll around town, do some wine tasting, etc. We will then take a drive around beautiful Lake Trasimeno, just south of Cortona, where we will stop in a lakeside town for lunch, and once again stroll around, do more wine tasting, cheese tasting, etc.

We will rest up a bit in the late afternoon before we go to the nearby provincial capitol of Viterbo for the evening. There, we will stroll Viterbo's medieval district, which is known to be the among the best preserved in all of Europe. We will also visit the Papal Palace of Viterbo, which was essentially the Vatican for several hundred years on an off, starting in the 13th century.

For dinner this evening, we will dine in a winderful local restaurant in Viterbo.

Today we start our day with a visit to a local dairy farmer in Soriano's countryside. We will tour his family operation and take with us some raw milk for today's class: When we get to the villa, we will learn how to make fresh mozzarella cheese the way it has been made for thousands of years. There is no comparison whatsoever between real, fresh mozzarella and the rubbery variety you find in supermarkets. You will not only learn how to make it, but you will leave this class being able to make it easily at home!

As we produce our cheese, we will make a mozzarella-based lunch. We'll start with two classics: Fresh Mozzarella topped with salt and the extra virgin olive oil produced from our own trees. After that, we will prepare a classis Caprese salad. Finally, we will prepare a specialty dessert from Sardegna called Seadas, which is a deep-fried pastry, stuffed with mozzarella cheese and drizzled with local honey.

After a rest, we will head off to Rome for the evening. There are some things in Rome that are just better at night, and tonight is it. We will visit the Spanish Steps, The Trevi Fountain, The Patheon, The Triton Fountain and Via Veneto.This is all located in the center of ancient Rome, where we will have time for shopping in many of Rome's most beautiful shops.

For dinner, we will stay in the center of ancient Rome and dine at a famous tradirtional Neopolitan pizzeria that is known to serve the best Pizza in all of Rome. After dinner, we will stroll some more, have a gelato and enjoy the beatifully lit piazzas of this eternal city.

Day 6 (Thursday) -Assisi, Todi, Montefalco, Deruta, Spoleto (+ Wine Tour / Tasting )

Today we will spend the day in beautiful Umbria, the green heart of Italy. Umbria is boasts what is arguably the most breathtaking scenery in the country, and today we will have our breath taken away all day long. It also boasts some of Italy's best wines, olive oils, and most famous ceramics. We'll start by taking our drive to Assisi in the morning. On the way, we'll make a stop in beautiful Todi, then again in Deruta to see some of their world-famous ceramics. We'll then spend the late morning and lunch touring Assisi, visiting the magnificent cathedral, the tomb of St. Francis, and more.

In the afternoon, we will take a drive to beautiful Montefalco, known as 'The Balcony of Umbria', where we will tour a winery known for the world-famous Sagrantino wine. After our tour, we will participate in a wine tasting with local cheese, salames and more.

Finally we will stop in the beautiful town of Spoleto for a stroll and dinner.

Day 7 (Friday) -Tarquinia, Pitigliano, Montefiascone, Lake Bolsena (+ Gnocchi Class for dinner)

Today we will will go to Tarquinia and visit their Etruscan necropolis, which is the best preserved Etruscan site in the world, dating back to the 6th century BC. We will see the incredibly well-preserved frescos that have been essential in helping historians understand this mysterious race of people that pre-dated the ancient Romans. Next we will stop in a local olive mill for olive oil tasting and a fantastic lunch.

After lunch, we will drive up to the beautiful Tuscan town of Pitigliano, which is well-known for its white wine. We will have an opportunity to do some tastings if we disire before taking the scenic drive around Lake Bolsena, and through Montefiascone (Known for its Est! Est! Est! white wine), and back into Soriano.

Once in Soriano, we will rest up a bit before starting the grand finale of our classes: Homemade Gnocchi & Tiramisu!

In this class you will learn our family secrets of making homemade Gnocchi from scratch, and prepare two delectable sauces for it. The first is a delicate butter and sage sauce, followed by a traditional local Porcini mushroom based sauce, made with fresh Porcinis from our local forests. For our appetizer, we will make fresh goat cheese and grilled Pancetta atop fresh Ciabatta bread. For our second course we will learn to make Pollo ai Pepperoni, with Tuscan-roasted potatoes as a side dish. To cap the meal off, for dessert we will teach you to make our own very unique and special recipe of Tiramisu that is certain to be the best you have ever tasted.

Unfortunately our week comes to a close this morning. We will have breakfast, take you to Rome and exchange hugs this morning.

 

Menu Variations
The menus listed on the itineraries are subject to change depending on season.  This is a summer menu. We use only fresh ingredients wherever possible, so if we are unable to prepare a certain dish, it will be substituted. In case of expected rain, Pizza night will be replaced with Lasagna class. Between November and April, Pizza night will be replaced with an evening of Italian Grill at the fireplace.

Excursion Substitutions
In case of rain, some excursions may be altered or replaced. Additionally, we often modify excursions on the fly in order to take advantage of local festivals that may occur during your tour.
